Slow LPD Network Printing

I've configured one linux server (running a command line app called pinnacle) to print through LPD to a remote debian server that the then uses lprng to send the information to one of two serial printers (Samsung SRP-350). Here is the thing, I get a random amount of lag between when the job arrives at the server and when it prints it (between 10sec and 2mins), and I can find no discernable pattern.

I've mucked with the printcap on both machines to see if I can find a cause. Also i've tried a bit of ethereal to see if there is something clogging the network (nothing that i can see). Quite frankly if there is a network issue causing it(i.e. virus), how can I nail it down while they're trying to use the system.

Ideas?
