I would think that these systems simply scan for specific text and flag messages. It is possible that they will also flag messages that have a low number of words that dont match a known language so that they can be investigated by a human later but this is probably unlikely as there would be too much to go through.

To be honest, if you are really looking to defeat these systems then PGP is far better (and we are looking to provide this in sneak at some point in the future). The problem with pig latin is that if something does get flagged for a human to view it wont take them log to decode. PGP will take a good while longer... :o)
