Use cfdisk (or fdisk [1]) to modify the partition's type (from NTFS to ext2/3, or whatever you want) or to delete and recreate it (modifying should be ok).
Then, use mkfs (or mkfs.ext2 or mke2fs, etc) to create a filesystem on it (the actual formating).

Does it help ?
